Hey friends,
How
are we going so far, already one month down, and eleven to go. My,
how time flies when your having fun. Well, I have been having a
lovely time with my gorgeous girls during the summer holidays and
taking full advantage of the glorious weather and having a fabulous
summer. I just want to say and share with you that my oldest daughter
Daniella (she is 15yrs old) has today passed her surf lifesaving
certificate and can now participate in surf patrols on the northern
beaches. GOOD ON YA DAN, mums proud of you.

Let me share with you MY FIVE top tips for the summer months.
ONE
Take a hike. Go for a walk when you get up in the morning. Exercise
not only wakes you up for the day ahead, its a great way to
enjoy time to yourself. Walk for an hour, and youve just burned
anyway between 600 to 1200 kj.
TWO
Make some waves. Fed up with your usual gym routine?. Head for the
pool ! Swimming is a great way to get in shape, and it can also
be a very simple form of mediation. Focus on the movements youre
making, and feel your mind clear. By the way, you are never too
old to learn. Many centres offer stroke correction classes for children
and adults and if your like me, you may find that by starting, youll
find a new sport to enjoy and feel great about doing.
THREE
Pace yourself. Stress can play havoc with your health. While summer
offers plenty of opportunities to relax outdoors, weekends are often
crammed with parties, shopping and traveling. Be honest about what
you can achieve, and resist the urge to eat on the run.
FOUR
Fresh is best. Cooking with seasonal ingredients takes the heat
off you in the kitchen and its also good for you. Fresh
local produce is packed with nutrients, and grilling, barbecuing
and steaming help retain the goodness. Stock up on mangoes, watermelon,
fresh fish and salad veggies for low fat meals.
FIVE
Scrutinise snacking. Studies have found we become more sensitive
to flavours when were hungry, which means we eat more sweet
and salty foods than we need to feel full. So dont head for
the vending machine, grab some fruit and yoghurt instead. Youll
save money and kilojoules.

. Yes, its that time of year.. let
me remind all you lovely men who we just LOVE LOVE LOVE
yes,
its February, and its VALENTINES day on the 14th. So one and all
dont forget to spoil your partners, you may wish to start
with our super duper recipe this month which you can all enjoy.
3 cups cake flour
1
3/4 cups sugar
1 1/4 cups water
1/2 cup shortening
3 T. water, 3 T. oil, 2 tsp. baking powder; mixed together
2 1/2 tsp. baking powder
1 tsp. salt
1 1/2 tsp. vanilla extract

Preheat
oven to 350 degrees. Grease and flour two cake pans. In a large
bowl, combine all ingredients. Using an electric mixer, beat until
well mixed, approximately 4 minutes. Pour batter into cake pans.
Bake 40 to 45 minutes, or until toothpick inserted in center comes
out clean. Cool in pans 10 minutes before removing to wire racks.
Frost when completely cooled.
Note:
Baking powder is intentionally listed twice in this recipe. The
combination of 3 T. water, 3 T. oil, 2 tsp. baking powder; mixed
together is the substitution for 2 eggs.

cup margarine, softened
1/2 cup Hershey's® unsweetened cocoa powder
2 2/3 cups unsifted icing sugar
1/4 cup water
1 tsp. vanilla extract
Beat
margarine on medium speed in large mixer bowl until softened, about
1 minute. Add remaining ingredients. Beat on low speed until ingredients
are moistened. Beat on medium speed until creamy.

large bowl, combine all ingredients. Mix until smooth.
Suggestion:
Add a few drops of food coloring to tint the frosting.

Kayaking Extravaganza!
Here's
your chance to discover the joys of kayaking, see a wonderful
part of Sydney and meet other Body for Lifers! On
Saturday February 5 starting at 1pm, Tony Carr will host
an afternoon of kayaking on Lake Narrabeen - you'll paddle
the length of this beautiful waterway and explore little-known
Deep Creek. You'll get a good upper body workout, even though
the pace will be leisurely. We guarantee you a great time!
Tony
was Prime Time Australian Body for Life Champion
in 2002 and is one of the country's top paddlers. He is
currently in a leading position in the 2004/5 Men's Health
Ocean Racing Series, being held around Australia, with the
final race day at Palm Beach on January 23.
