Hello friends.

Oh MY GOD.. well what a month… I don't know where to start. FINALLY got to meet the AWESOME Ms JENNY HENDERSHOTT who is just an incredible beautiful soul sista… Had lots of fun at the camp and forged new friendships as well.

It was nice for my clients to actually see me workout alongside them, and I must admit that I was in AWE seeing Jenny also lifting the weights along side ME. I was at Sydney CAMP HEADQUARTERS and just wanted to thank all the campers who travelled far and wide, from TASMANIA to WESTERN AUSTRALIA and from CAIRNS to the RED CENTRE. THANKS girls for making camp so special. There WILL be a camp next year for sure.


I've added most of the PHAT CAMPERS to this newsletter so I hope you enjoy these monthly updates… FIRST PHAT CAMP REUNION will be at the Sydney BFL support meet on JULY 17th. Have a look in the WHATS ON THIS MONTH SECTION, and feel free to bring your photos to share.


Doing lots of nice things with Make a wish this month including granting a GREAT overseas wish. It certainly puts perspective into my life when I do this type of volunteer work, and I’ve got to say that this type of work is just so incredibly rewarding and special to really see the help, hope, and happiness you provide to wish families. If you don’t already support this great organization then please do. It’s a very special thing that we do.

I plan to make some changes to this website as well. Some things I’m thinking of doing are putting a forum in place, a special Question and Answer Section, some fitness tools and calculators and a small shopping section which will not only include my training journals and tee shirts but in the future my motivational audio CD’s, Calendars, tickets to DESIRE DAY SPA VISITS and the opportunity of getting some great bargains on BRASIL fitness clothing and natural beauty and skin care products.

My little BELLA BOO is just SOOOO CUTE… getting cheeky and bigger and its just so nice to have a puppy at home. Just had to write something about her. She jumps in bed with me every morning and snuggles under the doona..

Ingredients

For the marinated grilled chicken:
1 cup low-fat or non-fat plain yogurt
zest and juice of 1 lime
2 cloves garlic
2 tablespoons honey
1/4 cup minced red onion
2 tablespoons chopped cilantro leaves
4 boneless, skinless chicken breasts, about 4 to 6 ounces each

For the corn salsa:
2 teaspoons olive oil
1 cup fresh corn kernels, cut from the cob (about 2 ears)
1/4 teaspoon sugar salt to taste freshly ground black pepper
4 teaspoons balsamic vinegar
2 chopped, fresh plum tomatoes
1/4 cup finely chopped red onion
1/4 cup chopped cilantro leaves
1 jalapeno pepper, or to taste, seeded and finely chopped


Cooking instructions

For the marinated grilled chicken:

1. Mix all the ingredients except the chicken in a large bowl.
2. Add the chicken to the mixture and coat evenly.
3. Cover the bowl and refrigerate for at least 4 hours or overnight.
4. Preheat the grill.
5. Remove the chicken from the marinade and discard the marinade. (This protects against cross-contamination.) Sprinkle the chicken with the salt and pepper.
6. Place the chicken on the hot grill and cook until the juices run clear, 6 to 8 minutes per side.

For the corn salsa:

1. Heat the oil in a skillet over medium heat. Add the corn and cook for 2 minutes. Add the sugar, season with salt and pepper and cook for another minute. Add the vinegar and cook for 1 more minute.
2. Transfer the corn into a small bowl and cool slightly. Stir in the tomatoes, onion, cilantro and jalapeno pepper. Adjust the salt and pepper to suit your taste. (This can be made in advance and stored in the refrigerator for up to 2 days.)
3. Spoon the salsa over each piece of grilled chicken.

Serving Size: 1 chicken breast with salsa

On SUNDAY the 24th of JULY at NOON... Desire Fitness Clients and Friends are invited to try out The Edge indoor rock climbing centre.
This is going to be a fantastic family day out that will really get your muscles screaming for more. The centre is located at 9/10 Hudson AveCastle Hill NSW 2154 . Please ring and register your interest on (02) 9899 8228 about a week before the event and to also ask any questions. DESIRE CLIENTS pay only $7-00 for a full days of climbing, harness hire and instruction. This is a great saving so I really hope to see you all there to have some fun. Indoors, the average wall range is from 6 to 12 metres ( The Edge Adventure centre is 18 ˝ metres in height) you only have to climb as high as wish, when your ready to come down, let your belay know, and down you come, it is as simple as that...All ages can climb and abseil, from as young as 2 (our youngest) right up to 88 years (Currently the Edge's oldest ever climber). This is for sure a must do event. I'll be there with my whole family.. I hope to see you all there too.

ASICS Walk for Wellbeing

Where:
Bridgewater Park, Margaret Street, Leichhardt.
When: Sunday, July 10, 2005
What: The people of Sydney will lace up for the ASICS Walk for Wellbeing on Sunday, July 10 2005, at Bridgewater Park to raise much needed funds for the fight against diabetes, and raise awareness of the importance of regular exercise in preventing Type 2 diabetes. Participants can choose to walk the 4km or 8km course through beautiful Bridgewater Park. Parking available on side streets and at King George Park.
TIME: Walk begins at 11 am

SYDNEY International Boat Show.

The PREMIER boating event of the year… 28th July to 2nd August starts 10am until 8pm at the Sydney convention and exhibition centre Darling Harbour.



Well.. what an incredible few weeks its been. .I cant begin to describe what a fantastic experience its been we had girls fly in from all over Australia to attend the camps and even New Zealand. We all left having experienced first hand Jen’s incredible energy and positive nature. Jen LOVES our lovely country and has guaranteed a return next year. We had ladies from all fitness levels do this camp from 65 year old grandmothers to 15 year old teenagers. Everyone learnt something new, and it forged firm strong friendships. HOW AWESOME IS THAT !!!

Just want to say a quick HI and HOWDY to MARIAH YU who is the current EAS grand master international female champion who is also doing Jen's Jacksonville camp in the states. Have a great time and enjoy those pop squats.

This month I am proud and honoured to feature a truly beautiful lady from AMERICA who is one of BFL’s newest champions. SHE GIVES new meaning to the word LIFE. When I read Julie’s story I don’t have time anymore with excuses as to why I can’t achieve health and fitness in my life. I hope her story inspires you to seek the reasons to start your fitness programme today. I've attached her original before photo, Sept 2003 and her latest after photo, June 2005. There's also a photo of Porter, Herself and Don Workman (from Tennessee Body-for-LIFE) at her very first EAS appearance. Julie started her 8th BFL challenge on Monday! And makes progress with each challenge. Here's her message to the people of Australia.

Hey ya'll! That's Southern talk for "Greetings Everyone!". I'm from a small-town in the Appalachian Mountains of Virginia, USA. If you've seen The Andy Griffith Show, you've experienced a taste of my life. I live one hour from the town on which "Mayberry" was based.

At age 19, I had Hodgkins Disease (lymphoma) and the treatments nearly destroyed my lungs. I developed interstitial lung disease, a permanent condition. Through the years I’ve been plagued with serious lung infections, the last one culminating in pneumonia. I was on life-support and in a coma for weeks and it took months to rehabilitate. I have 25% of the lung capacity that I need, or in other words, half of a lung! At age 36, I'm currently awaiting double-lung and heart transplant. I use the Body-for-LIFE program to stay as healthy as possible. I was named the EAS Body-for-LIFE Inspirational Champion 2004! I'm doing so well that my transplant status is on hold! As long as I can hold this degree of health, I can prolong the time between now and transplant.

When I awoke from the coma, one of the songs out at the time was Shania Twain's "Up!" The lyrics say, "Up, up, there's nowhere but up from here." I remember humming that song to myself as I learned to use my legs again. I could have never imagined how far up I would eventually climb. In fact, I'm still improving. How far can I ascend? How far up can YOU go? I want to challenge everyone in Australia to take control of your life today! Don't wait another day to create your best life! Enter the official EAS challenge and find the champion in YOU!
